Interior remodel structual concerns

I'm modifying the dinette (sleeper) and galley of my 1987 Bayliner 2550. The base structure for the dinette, what amounts to a fiberglass coated plywood wedge cabinet (hypotenuse of which matches the hull and the right angle forming the level pedistal for the dinette)is attached by bolts to patial bulkheads fore and aft. The remainder of the 'wedge' and bulkhead and floor seams appear to by merely sprayed polymer/fiberglass material(as if in manufacturing, a technician simply climbed into the hull with a hose/nosle assembly and sprayed the attaching polymer/fiberglass--this because there is none sprayed on the upper most seams of the interior of the structure). Should I expect to find screws, driven from the bottom side of the plywood central floor and thereby not accessible? Can these structures, above the fiberglassed in central plywoood floor, be removed, flush with the floor, without weakening the strength (lateral compressive) of the hull ?
