Best way to finish off new floor?

I started a floor replacement on my 88 Four Winns this year, and once I got into it, it was clear that the stringers needed repair as well. I decided to have a local shop do this part and I would finish off the floor. First question is what is the best way to replace the floation foam? to drill 1" diameter holes in the installed floor and inject it or pour it and then trim it level with the stringers. Second is what is the proper weight cloth to use to go over the new wood and bond it to the old floor? I cut out the floor from just in front of the seats back to the motor compartment, and left about 3-4" of the old floor bonded to the hull that I can place a shelf underneath to support the edge of the new floor. I was planning to finish it with epoxy and cloth. Any thoughts?
