Some years ago, I bought a 37' wood Egg Harbor. One of the things I did was to redo the stern. Nothing prettier that a nicely stained and varnished stern on a wood boat.
Anyway, I didn't like the dark stain on it and a boat yard guy who did some bottom work for me suggested bleaching it out. I told him to go for it. He did and the wood was almost white. I restained to my liking and varnished. Looked great.
My question, what kind of product did he use? I have a furniture project that I want to bleach out and restain, but can't find anything to do it with.

Yes. Oxalic acid is sometimes sold as "wood bleach". Check your favorite home center in the paint or deck department.
